For my dinner, I wanted to do something yummy, cheap, and quick. I am also a HUGE fan of brinner (breakfast for dinner - we might have made that word up but go use it!) so I found this recipe and knew what I was making.
I know you can click that link and see the recipe, but I am going to get through it anyway to give you a few tips I realized while making/eating it!
First the important information:
Calories: 204 (when we entered all the ingredients into our calorie counter, it came up more like 230ish but I think we used cheese that was high in fat - just know that this will vary)
Servings: 4 ( I agree with this, but you def want a side if you're eating it for a meal - Maybe not at breakfast, but I personally feel like I'd still want a banana on the side)
Ingredients (divided by the steps they will be used in):
1/2 cup water
1/3 cup uncooked couscous
1 tbsp water
3/4 tsp salt
1/4 tsp pepper
4 egg whites
3 eggs
1 red bell pepper (it says strips, but it would probably be less awkward to eat if they were in smaller pieces)
1 cup sliced onion
2 garlic cloves, minced
1/3 cup shredded cheese (really any flavor will work)
How to Make:
Boil 1/2 cup of water. Stir in couscous, remove from heat, cover and let sit for 5 min.
In a bowl, combine 1 tbsp water, salt, pepper, egg whites and eggs.

At this point, the recipe ignores these two pieces of your meal until the next step is done, but I realized that the couscous was starting to get hard again and that was not good! So, after the couscous sat for its 5 minutes, I combined it with the egg mixture, this will help the couscous stay soft until you're ready to cook it.
Saute red bell pepper, onion, and garlic in a large nonstick skillet over medium heat. Do this for 5 minutes, or until onion is pretty and brown. Then, pour in your egg/couscous mixture and make sure your vegetables are nicely spread out.
See, the strips are a bit weird, cut them up more!
Sprinkle the cheese on top and put into the oven at 350 degrees for 10 minutes.
Just a tip: since your skillet probably has a plastic handle and you will be putting it in the oven, cover it with aluminum foil to prevent it from melting. You can see that I did this above. I am not sure why this works but it did for this recipe (online sources I have read say it only works for short amounts of time so don't leave it in there for a half hour).

After taking the frittata out of the oven, let sit for a few minutes and enjoy! I served it with a fruit salad of strawberries, banana, and apple (I'll tell you how I made it in soon) because it seemed like an appropriate breakfast side. It was delicious and I will be cooking with couscous more often now!
